Sliabh Liag Distillery Reclaiming the distilling heritage of Donegal
The Sliabh Liag Distillery is setting out to reclaim the distilling heritage of Donegal by building the first distillery in the county in over 170 years. Donegal was a county renowned for its mostly illicit distilling and universally recognized as the home of quality Poitín.
With a passion for Irish Whiskey and authentic brands the Founder’s are bringing their vision for retelling the legends and folk lore of the Donegal Gaeltacht in a modern and confident way with super premium spirits.
The Silkie blended Irish whiskey was launched last year and the An Dúlamán Irish Maritime Gin distillery has been commissioned in a leased building.
The main focus is to build the Sliabh Liag Whiskey Distillery further up the Abhainn Bhui (pronounced Owenwee and means Yellow River) in the lee of Sliabh Liag (phonetically shleeve league and means Mountain of Flagstones). The 20 acre site known as “The Bull Field” now has full planning permission and the distillery is designed to produce a total of 400,000 litres of pure alcohol per year as triple distilled single malt and Pot Still whiskies.
Sliabh Liag Distillery is targeting two rapidly growing spirits sectors. Irish whiskey has been the fastest growing spirit category in the world over the last 7 years; and super premium gin has been exploding on the back of boutique and artisanal gins with intriguing botanical recipes.
