An Dúlamán Gin Palace
An Dúlamán irish Maritime Gin is distilled in small batches. At its core is the 500L hand beaten copper still from Forsyths of Scotland. First the still is used to create our seaweed essences from the four-shore gathered seaweeds, collected only in the lowest of tides.
A unique process and a recipe that has taken the best of traditional knowledge and married it with the latest techniques to bring a touch of Donegal divilment to the world of gin.
The Sliabh Liag Whiskey Distillery will make Irish whiskey in both Single Malt and iconic Pot Still variants. Highly differentiated and reflecting the authentic style in which Donegal whiskey was made in the 19th century. Triple distilled, rich, smoky and peated. The whiskies share in the folk lore of the Donegal Gaeltacht and are steeped in the rich, and often illicit, heritage of distilling on the Sliabh Liag peninsula.
The 20 acre site has been granted full planning permission and is known locally as the Bull Field. It is on the Wild Atlantic Way and in the lee of Sliabh Liag on the banks of the Abhainn Bhuí (Yellow River) a spate salmon and sea trout river.
The distillery buildings are designed by CornerStone Architecture of Donegal using traditional shapes, forms and materials. The Sliabh Liag Distillery will initially comprise the still house and barrel store, in a later phase the visitor centre and relocated gin palace and Poitín museum.
